Custard apple foam with chocolate curls

Ingredients: 

For 6 people:

½ kg. of custard apple pulp, stones removed

150 grs. of single cream

100 grs. of egg whites

50 grs. of sugar

4 gelatine leaves

30 grs. of milk

Whisk the egg whites until stiff and add the sugar.  Heat the milk and add the previously soaked gelatine leaves, add to the custard apple pulp.  Mix the custard apple pulp with the egg whites and gradually add the partially whipped cream.  Fill individual round molds and refrigerate.

Decorate with chocolate curls or sheets.
