Glazed monkfish from Motril

Ingredients: 

For 2 people:
300 grams of monkfish
2 potatoes from Motril
A glass of olive oil
A teaspoon of vinegar
2 yolks
4 peeled cloves of garlic
Salt
Cherry tomato
Green asparagus

Prepare a mayonnaise sauce with the 2 yolks, the olive oil, the vinegar, the salt and the garlic. Set aside.
Roast the potatoes, season the monkfish and cook it in the griddle until lightly roasted.
Then, place the monkfish and the roasted potatoes covered by the mayonnaise sauce and put it into the oven to 240 º until golden brown.
Roast the asparagus and the cherry tomatoes in the griddle and add them to the fish.
The dish is ready to be served.
